Information you may need to know: I have 2 girls, ages 13 and 10. I am a single mom who works out of the home. I live in Hemet, California and drive daily around town, as well as 25 miles to church in Temecula twice a week (sometimes more for visits to the mall or to visit friends or family).

Crock Pot Italian Chicken

I have many food boards on Pinterest. One for dinner, breakfast, school lunches, and of course, one for the Crock Pot.

I was browsing that board looking for something for dinner for Saturday. I enjoy cooking, but Saturdays are really the only day I try new recipes because I have a friend come over. The girls are picky, but my friend is more open-minded toward new food.

This recipe is from Crock-a-doodle-do. I made some adjustments, including making my own Italian Dressing.

The recipe calls for 2, but I used 3. I sprayed the bottom of the Crock, then placed the chicken in. I seasoned the chicken with salt, pepper, and minced onion and garlic. I didn't put dressing on it.

Big Sis took a pic of me cutting the potatoes.

The recipe shows red potatoes, but the ones at the store looked funny. I chose yellow potatoes. I quartered them into bite-sized pieces.

Potatoes and baby carrots over the chicken.

Here is what my Italian Dressing looked like in the jar. Much tastier than the store bought bottle.

I poured the whole jar over the top.

Yum.

I added some Parmesan Cheese on top, too, and I'll add more to the spuds and carrots when I take them out.

I started it on low for about 3 hours. In the past, high was too high, but when I got home at noon from dropping Big Sis off at church, the potatoes were still firm. I turned it up to high after about 3 hours for another 3 hours.

Turns out, the potatoes needed another 30 minutes. In doing this, I recommend starting on HIGH for 3 - 4 hours, then drop it down to low for another couple hours.

The chicken was so good. It was tender and fell apart with just the fork. The seasoning was perfect, too.

These were the potatoes and carrots still in the sauce. They needed to cook for a little longer.

I added a loaf of garlic bread and a salad on the side. I made another batch of Italian Dressing for the salad.

Little Sis approves!!!

July Photo-a-Day Challenge Day 4

Click the Link at the Top for other contributions to Fat Mum Slim's photo-a-day challenge.

Day 4: Red, White, or Blue

Apparently, July 4th is a great day to go shopping or out to eat. Every place was empty!
Little Sis had seen some shoes on another little girl, so we went. She ended up not getting the shoes she saw, but a really cute pair of yellow canvas shoes. And, they were on clearance for $8.

July Photo-a-Day Challenge - Day 3

Click the Link at the Top for other contributions to Fat Mum Slim's photo-a-day challenge.

Day 3: Cold

Little Sis and I had to make a second stop to Walmart before heading home. I had forgotten to buy a plunger on the first trip I went on with Big Sis earlier in the day. Anyway, Little Sis and I decided to stop for an ice cream cone at McD's before shopping.

July Photo-a-Day Challenge Days 1 & 2

I am usually really bad at doing this. I forget, or stay home all day and have nothing interesting to take a photo of.

I had a couple photo-a-day challenges, but my friend, Wendy, showed me this one from Fat Mum Slim:

Here are my contributions:

1. Happiness is....

Little Sis with our Children's Pastor. Little Sis made her public declaration of faith on Sunday, June 30 with a water baptism.

2. Shoes...
These are my favorite shoes right now. Easy-on, comfy, and waterproof (I wore them out of the pool and they got soaked. No damage!) Can you believe they're CROCS? Yes, yes they are.

I'll (hopefully) remember to blog the rest of the month. I will be putting them up on my Instagram, though (JustAddLaughter - shocking, huh?)

If you're participating, use hashtag #FMSphotoaday on Instagram.
