365 Challenge - January 25
Tonight marked the first ever Stadium Series NHL game in Southern California. The Los Angeles Kings hosted the Anaheim Ducks at Dodger Stadium.
A couple friends informed me there was a watch party at Honda Center, so I drove up to join them. It was pretty fun. I got in some practice cheering for the Ducks, since I will be seeing them take on the Dallas Stars on February 1.
We had to stand for the first period, but we ended up with a table. We ordered wings and garlic fries and watched the Ducks shut out the Kings.

Little Sis had a sick day today. She had a severe upset tummy last night, and I didn't want to send her in today.
Thankfully, she is all better now. She was able to keep chicken noodle soup, Gatorade and toast down.

365 Challenge - January 21
Today's picture was inspired by a friend of mine. He sent me a picture of chicken he had made for his lunches at work. So I asked for the recipe and made some when I got home.
Chicken breast
Salt and pepper
Garlic and onion powders
Dijon mustard
I put it in my grill skillet, covered with seasonings and mustard, and cooked until 160 degrees. Easy peasy.
Sliced up and put on a bed of rice and broccoli. Then I put them in Easy Lunchbox containers.
I take no credit for this amazing and delicious idea. :)

365 Challenge - January 20
Today, Little Sis and I went on a San Diego adventure!
First, we went to San Diego de Acala Mission.
Then, we went to the San Diego Zoo. We have a membership that expires next month. First, we had a picnic lunch in EasyLunchbox Containers.
Finally, we went to Coronado Beach. It was absolutly beautiful today.
Back to work and school tomorrow!

365 Challenge - January 18
Back in late 2013, Disney fans learned that the parks were "retiring" long-running entertainment attraction Billy Hill and the Hillbillies.
Fans rallied. Petitions were started and letters to Disney were written. Alas, January 6 rolled around and their final set was to take place. The venue was packed. OC Register ran a story, which was much-coveted among my group of friends.
Saturday, January 18, Krazy Kirk and the Hillbillies opened to a packed house at Knott's Berry Farm. They played 4 shows, of which I saw the first 3. They were amazing, as always, and I look forward to seeing them on a regular basis, just like when they were at Disneyland.

365 Challenge - January 15
Today my girls and I had a small pampering day. Manicures and Starbucks! Big Sis got there later than us because she walked from school (just a few blocks away), so Little Sis and I were done shortly after she got there. Little Sis and I decided to go sit at Starbucks while we waited. It was perfect weather. Not too hot or cold with a slight breeze. Perfect afternoon.

This is actually the second page like this. It felt really good to get some deep, spiritual prayer journaling in tonight.

365 Challenge - January 12
I took Little Sis with me today when I went to Downtown Disney to watch the 49ers game. She didn't watch, but played on her Kindle Fire and made rubber band bracelets. After, a friend and I took her to Build-A-Bear. Then we watched the end of the Chargers game and then went to other friends' apartment to watch the Golden Globes. Busy day, but lots of fun.

365 Challenge - January 6 (Recipe for Chicken Wontons)
So the original plan for dinner tonight was to use chicken and make a chipotle cheddar bake with a Kraft Creation. Well, the "use by" date was early December, so I didn't want to risk anything. (Please, don't lecture on being wasteful...)
So because I tossed the breading, I had to come up with something. I had egg roll wraps in the fridge. I decided to make wontons like my mom used to make. It was easy, but, it's a bit time-consuming. It took me about an hour.
These were the seasoning I used.
I chopped the chicken into bite-sized pieces, then put it in my EVOO-coated pan. I added the seasonings and sesame seed oil.
I cute the wraps into fourths to make them wonton size. I put a piece of chicken in each, then folded opposite corners in and sealed with water. Then I placed it in the hot oil and fried until they were golden brown.
I even was able to get 4 lunches of 10 wontons out of the leftovers. The girls loved them. I used EasyLunchboxes and the ELB Sauce Containers for sweet and sour.
Cooking and wrapping the chicken was easy. It was the frying that took the time. But fun, and a good appetizer for a pot luck!

365 Challenge - January 5
Spent the day at Downtown Disney with friends.. Lunch date, 49ers game at ESPN Zone, drove home listening to the Sharks game, got home in time to see the fantabulous ending. What a great day.
The Starbucks was for my date and myself... I think they put Pixie Dust in those cups!!

It's a little delayed. I was out having fun with friends last night, enjoying the last weekend of my vacation.
Yes, I went to Disneyland. I was on my own for a bit in the parks. I went around Disneyland park then went over to California Adventure and watched Mad T Party for a while. It was quite relaxing.

365 Challenge - January 3
Here is day 3. Dinner tonight was tri tip, which came pre-marinated (Santa Maria style). I broiled it for about 35 minutes (per package instructions). I also did a steamer bag of cheesy rice and broccoli and French Bread. It was very yum.

365 Challenge - January 1
My brunch today. I got home at 4am after spending the evening with great friends. Surprisingly, Trader Sam's at Disneyland Hotel was quiet. I woke up after noon, so I made good before I went to go run my errands.
